- 2 Sweet Potatoes
- 1 Large Yellow Onion
- 1 Head of Garlic
- 6 Cups Chicken Stock
- Basil
- Bacon
- Salt
- Pepper
- Heavy Cream
Method
Pre Heat oven to 400 degrees, large chop sweet potatoes and onion and place on baking sheet. Cut the top off of the garlic, add olive oil, salt, wrap in tinfoil and also place on baking sheet. Spread olive oil and salt on vegetables and bake for 40 minutes. Next place bacon in the oven.
In a large stock pot place 6 cups of chicken stock and bring to a simmer. Once vegetables are done, squeeze garlic into stock, place onion and sweet potatoes without skin into the stock. After simmering for 10 minutes add to blended. Blend in Heavy cream until you’re happy with the consistency. Top with bacon crumble and basil.
